Carrot Cake
Ingredients:
2 cups plain flour
2 cups granulated sugar
1 tsp salt
1 tsp baking powder
1 cup chopped nuts (optional)
2 tsp cinnamon
1 1/2 cups cooking oil
3 beaten eggs
3 1/2 cups grated carrot.
How to prepare:
Sieve dry ingredients
Add oil,eggs, carrots, nuts
Pour into well greased / lined loaf tin
Bake in moderate oven (350F, 180C) Gas Mark 4 for 65 minutes.
Topping:- Beat together 7 ozs low fat cheese, 2 tbs honey, 1 tsp lemon juice and spread over cooled cake.

Chocolate Heart Cake
Ingredients:
1/2 cup butter (or margarine)
1/2 cup granulated sugar
1 cup melted chocolate (70% cocoa)
1tsp vanilla
4 beaten eggs
1 cup plain flour.
How to prepare:
Cream together butter and sugar
Beat in melted chocolate and vanilla
Add beaten eggs slowly
Stir in flour
Spoon into a greased 22 cm (9 inch) round layer tin
Bake in moderate oven (350F, 180C) Gas Mark 4 for 35 minutes.
Topping:- Glaze cooled cake with sieved jam (apricot) and icing. To make icing melt 1/2 cup chocolate and 3 tbs evaporated milk in saucepan (medium heat), cool and spread over cake. Alternatively slice cake into 2 layers and spread jam between layers with chocolate on top. |
